Ingredients
- 4 cups watermelon, cubed
- 2 cups cucumber, sliced or cubed
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
- 1/4 cup feta cheese, crumbled (optional)
Instructions
- In a large bowl, combine the watermelon, cucumber, and red onion.
- Add chopped mint leaves to the bowl.
- In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.
- Pour the dressing over the salad and gently toss to combine.
- Top with crumbled feta cheese if using.
- Chill in the refrigerator for 10-15 minutes before serving.

- For a vegan version, omit the feta cheese or use a plant-based alternative.
