Ingredients

  • 4 cups watermelon, cubed
  • 2 cups cucumber, sliced or cubed
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup feta cheese, crumbled (optional)


Instructions

  1. In a large bowl, combine the watermelon, cucumber, and red onion.
  2. Add chopped mint leaves to the bowl.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.
